Franchise Times: Food Halls: The Big Retail Trend of ‘17

Industry insiders expect around 100 food halls to open in the next two years.

Franchise Times associate editor Tom Kaiser plans on checking out some of the best food halls the U.S. has to offer, starting at Chicago’s French Market and Revival. Kaiser spoke with Garrick Brown, vice president of retail research at Cushman & Wakefield, and learned that Brown expects at least 100 to 150 new food halls to be open by 2019.

Food halls are modern day food courts that have swapped out bland atmospheres and the regular KFC, Panda Express options for high end cuisine and authentic, quality aesthetics. The target market for such dining retailers are millennials with higher than average incomes.

According to Brown, franchised brands can capitalize on this trend, finding new ways to get their product in front of more consumers.
