Nation’s Restaurant News: Melt Shop’s Future and Past is in Franchising

Former franchisees use experience to franchise grilled cheese chain and become the franchisor.

Six years ago, a group of Five Guys operators in New York decided to use their experience to open their own brand, a grilled-cheese concept named Melt Shop. According to a recent Nation’s Restaurant News article, parent company Aurify has decided to start franchising the brand and will heavily rely on its experience as franchisees. After perfecting the system, they have announced they are ready to sell the concept to potential franchisees. 

“We felt like all the pieces have come together,” said Spencer Rubin, Melt Shop founder. “Operationally we’re ready. The brand is ready. The product is ready to be scaling this at a faster pace.”

Owning your own Melt Shop can cost anywhere between $368,240 to $698,800 for initial investment and a franchise fee of $35,000. Locations generate an average of $1 million to $1.6 million in annual sales according to the company’s own franchise documents. As franchisees themselves, Aurify owners believe that they will be more sensitive to franchisee concerns, which will make them successful in the long run.
