Columbia Daily Tribune: Slim Chickens Comes to Columbia

Local entrepreneur brings 'life changing chicken' to hungry residents.


On Monday, December 12, Scott Purcell celebrated the opening of his newest restaurant - the first Slim Chickens in Columbia, Missouri. Scott has helped open more than 100 restaurants, beginning with Olive Garden development in the 1980s. He compared each new opening to the birth of a child.

“It’s almost nine months from start to finish,” said Purcell in an interview with the Columbia Daily Tribune. “And there’s a really big event at the end.”

Slim Chickens is a fast-casual concept based in Arkansas. The chain offers fresh chicken served in a sandwich, wrap, salad, and as tenders or wings. Purcell plans to utilize his years of industry experience to offer exceptional customer service.

“We really play to our southern heritage where things move a little slower,” said Purcell to reporter Jodie Jackson Jr.

Purcell signed on for a 10-store contract with Slim Chickens and hopes to bring locations to St. Louis, Springfield, Jefferson City and Joplin, expanding Slim Chickens' current 46-store presence.
