Madison-based craft pizza restaurant The Roman Candle is beginning to expand through franchising with its sights set on two Rockford locations.
“It would be super exciting for us to partner with someone from Rockford who knows the Rockford neighborhoods and understands the peculiarities of that market,” Stouffer said. “I love Rockford. I think the downtown is beautiful. A place like Rockford could support at least two Roman Candles.”
Founder Brewer Stouffer had a vision to create the best pizza around when he founded The Roman Candle over 11 years ago. He wanted to create a product that had the locally soured, fresh, high quality ingredients he craved. After doing plenty of research, the pizza fanatic opened the first Roman Candle in Madison, with two other area locations and a restaurant in the Milwaukee area to follow.
“I think I have eaten pizzas in 15 different countries in North America and Europe, but I just wasn’t getting the pizza that I wanted and was craving,” Stouffer said. “There is just something about a well-made pizza that has the perfect balance of crust, sauce, cheese and toppings.”
In a world trending towards convenience, Stouffer felt that franchising was the way to continue his company's expansion, while maintaining their sterling standards.
“A lot of restaurants are trying to get faster and faster — quick, quick, quick, quick, or cheap, cheap, cheap, cheap. We’re not slow, but we are a dine-in, sit-down experience."
