Island Fin Poké is a Florida-based, fast-casual restaurant concept known for its Hawaiian-style build-your-own poké bowls, which feature homemade sauces, toppings and a variety of fresh ingredients. 

Island Fin Poké was founded in 2016 by Mark Setterington, a longtime entrepreneur who has owned various restaurants across Las Vegas, Nevada and Southern California. Setterington opened the first location in Winter Springs, Florida in 2017 and quickly began franchising, with the brand’s first franchised location opening in 2019.
