QSR Magazine: Rising Above the Poké Pack

Poké is an undeniable trend in the food industry, but this fast casual believes their restaurant is above the rest.

The founders of Sweetfin Poke were inspired to create a sushi experience that was more affordable. According to a recent QSR Magazine article, Brett Nestadt and Seth Cohen were banking on their poké fast casual concept to provide an alternative to expensive sushi in a more accessible bowl format.

“When we came upon the idea of selling poké, it had all the elements you love about sushi—high-quality raw fish, sauces, toppings—and when you put it in a bowl form and serve it at a fast-casual restaurant, you’re minimizing a lot of the overhead costs. You can bring the price down considerably to give someone the opportunity to have this meal a few times per weeks,” said Nestadt.

While the emphasis is on affordability, the fast-causal certainly doesn’t fall short on quality. Sweetfin has more than 30 fruits, herbs, vegetables, and spices for you to customize your bowl to your liking. You can create a healthier bowl with bases including bamboo rice or kelp noodles. But the star of the show—the fish—comes in many varieties; salmon, snapper, albacore or yellowfin tuna.
