The Orange County Register: Famous Dave's Explores Delivery Only Locations

Times are changing in the restaurant space as technology becomes a major player in the customer experience. A delivery-only concept for a full-service restaurant may have seemed unheard of years ago, but it could soon become a reality with Famous Dave's.

Anand Gala, owner of 10 full-service Famous Dave's locations throughout California, has his sights set on opening the brand's first-ever virtual kitchen concept. According to an interview with The Orange County Register, Gala mentioned the facility would exist solely to churn out barbecue chicken, St. Louis style spare ribs and beef brisket for delivery drivers, who would swing by the location before delivery.

A typical Famous Dave's full-service location is around 6,000-square-feet, and by eliminating nearly all of the wait staff, the virtual kitchen would shrink the location by 90 percent.
