“We’re already getting calls from people who want to be franchisees, and asking when we’re opening,” said Moran. “They know the brand well and are excited to share it with their friends here.”

“What these chains have found out is that running a bakery café is hard work,” said Moran. “That means to run an economical business they had to cut corners, limit menus and rely on off-premise bakers, taking the focus away from bakery products.”

Like the best patisseries, everything Paris Baguette serves is made on-site by trained bakers, cakers and baristas who get to work early and start rolling their dough. It’s all served in a space with a dash of je ne sais quoi, inspired by classic French cafés.

“A cake is sort of an exclamation point for a lot of life events, from birthdays and graduations to holidays,” said Moran. “No one does them better than we do. We make all the cakes on-site by people trained in this art.”
