World Coffee Portal: Paris Baguette North America Names Norm Ginsberg as VP of Operations

Paris Baguette North America has appointed Norm Ginsberg, a former Bowlero executive, as its new vice president of operations, World Coffee Portal recently reported. Ginsberg will lead operations across the bakery-café’s growing network in the U.S. and Canada, which aims to reach 1,000 locations by 2030.

With a background in guest-focused operations, Ginsberg is excited to join Paris Baguette at a pivotal moment. “I’ve been watching Paris Baguette for a number of years now, watching their growth and visiting their cafés,” he said. “I’ve worked with [CEO] Darren [Tipton] in the past, and when he let me know that we had an opportunity here — as the company is growing so rapidly — to do similar things and have that same guest-focused mindset, I knew we were aligned and was excited to come on board.”

Paris Baguette has steadily expanded in North America since its U.S. debut in 2005 and entry into Canada in 2023. Currently, it operates 170 cafes in the U.S. and six in Canada, with 70 additional venues in development. The chain is also eyeing expansion into Mexico, with plans to establish 100 cafes there, facilitated by a master franchise partner.

Ginsberg’s appointment continues Paris Baguette’s strategy to bolster its leadership team, following the October 2023 appointment of Eric Lavinder as chief development officer and the internal promotions in January 2024, which saw Nick Scaccio elevated from vice president of operations to chief operating officer.

Founded in 1988, Paris Baguette operates 3,750 cafes in South Korea and over 500 outlets across 11 international markets, continuing its rise as a global bakery-café leader.
