<p>Back in 1998, Eric Ersher made a realization about&nbsp;the restaurant industry&mdash;and that was the fact that&nbsp;really good, made-from-scratch soup was hard to come by. Looking to fill that unmet need, he opened the doors to his own restaurant in Southfield, Michigan: <a href="http://www.zoupfranchise.com/?utm_source=1851franchise.com&utm_medium=article&utm_campaign=1851-on-the-road-eric-ersher-of-zoup-10297" target="_blank" rel="nofollow" target="_blank">Zoup!</a> Today, <a href="http://zoup.1851franchise.com/?utm_source=1851franchise.com&utm_medium=article&utm_campaign=1851-on-the-road-eric-ersher-of-zoup-10297" target="_blank" rel="nofollow" target="_blank">Zoup! has nearly 100 restaurants</a> in more than 20 U.S. states and Ontario, with even more scheduled to open this year.</p>
