Beef ‘O’ Brady’s and The Brass Tap Recently Announced New October Menu to Welcome Fall

The Oktoberfest-inspired lineup, complete with pretzels, beer cheese and sauerkraut, was developed by recently promoted Vanessa Marquis.

TAMPA, FL – To welcome the official start of autumn and celebrate Oktoberfest, FSC Franchise Co., the parent franchisor of both Beef ‘O’ Brady’s and The Brass Tap, has announced new fall lineups at both restaurants. Developed by Vanessa Marquis, who was recently promoted from R&D Chef, Manager of Culinary Development to Corporate Executive Chef, Director of Culinary Innovation, the menus incorporate traditional fall flavors and fun nods to Oktoberfest.

“If you’re someone who has visited Germany and you’re missing those flavors and the extra warmth of having a hot pretzel or bratwurst, this is a great opportunity to experience that again,” said Marquis. “You’ll be brought back to memories of being in Germany or even being at an Oktoberfest celebration in America. We’re bringing a little bit of Germany to both brands’ menus, and it’s a lot of fun.”

The Brass Tap’s “Taptoberfest” menu includes soft pretzels served with beer cheese and spicy mustard; fries or tots loaded with beer cheese, grilled sweet onions and applewood smoked bacon; the Taptoberfest Burger, which is topped with bacon jam, grilled sweet onions, sauerkraut and Swiss cheese; a bratwurst sandwich; and the Bratwurst Double Dawg, which is two grilled brats, beer cheese, spicy mustard, grilled sweet onions and sauerkraut on a hoagie roll.

Beef ‘O’ Brady’s “Beeftoberfest” menu features fries loaded with beer cheese, grilled sweet onions and applewood smoked bacon; hot pretzels; an Oktoberfest grilled chicken sandwich, which features a beer-cheese-smothered grilled chicken breast, bacon and grilled sweet onions; the Oktoberfest Double Dawg; Bratwurst & Mash, which is two grilled brats with mashed potatoes, topped with grilled sweet onions, sauerkraut, mushrooms and savory gravy; and an Apple Blossom dessert.

“For Beef ‘O’ Brady’s, we wanted to find a fun way to bring all of the fall flavors to the table,” said Marquis. “Inspired by an apple strudel, the Apple Blossom includes apples, caramel sauce and crushed pretzels; all of that in one bite is definitely a must. The entire Oktoberfest menu lineup is exciting, but the dessert is definitely a go-to!”

The seasonal menu is the first major development Marquis has taken on since her promotion to Corporate Executive Chef, Director of Culinary Innovation. Stepping into this new role, Marquis brings multiple years of experience with FSC Franchise Co. as well as a wealth of experience in restaurants, catering and even the American Culinary Federation Olympic team, and she has big plans to continue to drive the company’s brands forward.

“We definitely eat with our eyes first,” explained Marquis. “I’m excited to think about how we can get people even more excited to eat at The Brass Tap and Beef ‘O’ Brady’s. Pictures are such a big deal in food now, especially with social media, and I’m going to be implementing some really cool concepts with both brands to really make sure audiences get that ‘Wow!’ factor when they see photos of our food.”
