Famous Dave’s is embracing its barbecue shack roots with a new smaller-footprint prototype, launching first in Brookfield, Wisconsin, Franchise Times recently reported. Designed to meet changing consumer behavior and rising real estate costs, the new model offers counter service, a simplified menu and a streamlined operation. With sizes ranging from 1,500 to 3,000 square feet, the prototype enables development in nontraditional locations like inline spaces and endcaps.

“I think it really is the core root of what Famous Dave’s was founded on,” Chief Operating Officer Al Hank said.

This shift reflects Famous Dave’s evolution from full-service dining to a more flexible, fast-casual format that supports its growing digital and off-premises business. The new prototype is expected to cost approximately $600,000 to open — significantly lower than the brand’s traditional buildout, which can exceed $2 million — making it more accessible to both new and existing franchisees.

“I think it allows us to get into a whole different investment class in the restaurant space, and for people that are wanting to do that, it’s far more approachable than maybe some of our older economics,” Hank said. 

The company is using this model to reenter markets like Atlanta, where a three-unit deal was signed last summer. Existing operators under parent company MTY Food Group are also showing interest in multi-unit expansion using the new format.

Famous Dave’s leadership says this simplified, efficient model positions the brand for sustainable growth while staying true to its origins.
