Setterington opened the first location in Winter Springs, Florida in 2017 and quickly began franchising, with the brand’s first franchised location opening in 2019.

As a result of its offerings and expansion, Island Fin Poké was honored in Fast Casual’s “2022 Movers & Shakers List” and was also recognized as a 2022 top “100 Game Changer” by Franchise Dictionary Magazine.
