Pokeworks is a fast casual restaurant franchise specializing in Hawaiian-inspired poke bowls, sushi and other fresh, customizable meals. The brand offers customers a variety of proteins, bases, toppings and sauces, combining traditional poke ingredients with contemporary flavors. Pokeworks offers single-unit and multi-unit franchise opportunities for entrepreneurs interested in the growing fast casual restaurant sector.
Pokeworks was founded in 2015 in New York City by a group of entrepreneurs, including Michael Chen, Michael Wu and Peter Yang. The founders saw an opportunity to introduce Hawaiian-inspired poke to a broader audience through a fast casual restaurant concept centered on fresh ingredients, customizable meals and convenient service.
The company began offering franchises in 2016 and has since expanded through company-owned and franchised restaurants.
Mission: To make fresh, flavorful Hawaiian-inspired poke accessible to customers through customizable meals and quality ingredients.
Vision: To expand the availability of poke and establish Pokeworks as a leading fast casual destination for Hawaiian-inspired cuisine.
Pokeworks offers development opportunities in selected U.S. markets, subject to territory availability and franchisor approval. Qualified operators may pursue single-unit franchises or multi-unit development agreements covering at least three restaurants.
Prospective franchisees can inquire about current market availability through the Pokeworks franchise website.

Pokeworks offers a 15% discount to qualifying U.S. military veterans, reducing the standard fee to $34,000. To qualify, veterans must meet the company's requirements, including receiving an honorable discharge and holding at least 50% ownership in the franchise entity or restaurant.
For multi-unit developers, the initial franchise fee is $40,000 for the first restaurant, $35,000 for the second and $30,000 for the third and each subsequent restaurant. A three-unit commitment therefore carries $105,000 in initial franchise fees.

Pokeworks assists franchisees with the development process, including site selection, lease negotiations and restaurant construction. The company's development team provides guidance on selecting locations that meet brand requirements and preparing restaurants for opening.
Franchisees also receive assistance with restaurant layouts, equipment specifications and other development standards. The company works with operators to prepare their locations for inspections, training and the grand opening.
Pokeworks requires franchisees and designated managers to complete its initial training program before opening. Training covers food preparation, restaurant operations, customer service, food safety and management procedures.
The program prepares operators to follow Pokeworks' operating standards and train employees. Additional training or retraining may be required when new managers are appointed or when the company determines that further instruction is necessary.
Pokeworks provides ongoing support in restaurant operations, marketing and supply chain management. Franchisees receive guidance on maintaining food quality, managing restaurant procedures and meeting the brand's service standards.
The company also supports franchisees through national marketing initiatives, local promotional resources and assistance with restaurant openings. Multi-unit operators must demonstrate financial and operational compliance at existing locations before receiving approval to develop additional restaurants under the company's Certified-to-Expand policy.
Pokeworks requires franchisees to use designated restaurant technology, including point-of-sale systems and enterprise resource planning tools. These systems support transaction processing, reporting and restaurant management.
The brand also provides access to technology supporting digital ordering, customer loyalty programs and marketing. Franchisees pay a monthly technology fee to help cover the company's technology infrastructure and related services.
Pokeworks seeks franchisees who are committed to restaurant operations, customer service and maintaining brand standards. Candidates should have the financial resources to develop a restaurant and support the business during its initial operating period.
For multi-unit development, Pokeworks prefers experienced foodservice operators capable of developing at least three locations. The company also considers financial investors who work with experienced restaurant operators.
Pokeworks emphasizes hands-on ownership and expects franchisees to remain actively involved in their restaurants. Operators must complete required training, follow company procedures and maintain established standards for food quality and hospitality.
The brand's franchise website does not promote a traditional semi-absentee ownership model. However, it considers multi-unit investors who have experienced foodservice operators managing their restaurants. Prospective franchisees should discuss management arrangements with the development team before signing an agreement.
Pokeworks does not offer direct or indirect financing to franchisees.
“The support we get from the Pokeworks team is outstanding … they’ve been supportive, caring and work with us as a team.”
– Carol and Marcos Blanco, Multi-Unit Franchisees — Austin, Texas
The U.S. poke restaurant market has grown as consumers seek fresh, customizable alternatives to traditional fast food. Valued at approximately $2 billion, the market continues to benefit from meals that are both healthier and convenient.
Pokeworks competes with other poke restaurant chains, Asian-inspired fast casual concepts and restaurants offering customizable bowls. Its menu flexibility, poke burritos and established franchise network help distinguish it within the category.
Primary competitors include Sweetfin, Aloha Poke Co., Poke Bros and Poke Bar. Pokeworks also competes with sushi restaurants and broader fast casual chains offering rice bowls, salads and protein-focused meals.
Pokeworks outlines a five-step franchise development process on its website. The company states that most restaurants open within 12 to 18 months after signing the franchise agreement, depending on site selection and local permitting requirements.
