Louisville Business First: Small Plates: Melting Pot Completing $400,000 Renovation of Its Louisville Location

The 2045 S. Hurtsbourne Parkway location of the popular fondue franchise is rounding out the final stages of a major renovation.

The Melting Pot in Louisville, Kentucky is remodeling its location after two decades in business. The fondue restaurant, located at 2045 S. Hurstbourne Parkway is in the final stages of a $400,000 renovation process which will give the restaurant a more open, modern feel.

This remodel is part of a larger system-wide effort to bring all locations to a shared standard and updated look.

“Any new locations that go in are going to follow this new model of more open air, lighter colors, and an emphasis on the different revenue centers that we use in the restaurant,” said Collin Benyo, chief growth strategist. “So, it’s not just a traditional dining room setting that we started with a long time ago. It’s really just to keeping [sic] up with trends that are happening in the industry to make sure that we have that fresh look.”

Louisville guests will notice a few major changes, including a brand new party room and updated bar area that is very bourbon-focused.

Mike Polevchak, David Chantell and Dan Hawkins, co-owners of the Louisville location, said that the changes have been in progress since the pandemic and have consistently provided revenue boosts for the location.

“While we were closed down for Covid a few people took that that [sic] opportunity of already being shut down to do some things then,” said Chantell. “We completely repainted the restaurant while we were closed then to get to the new color scheme.”

Once the major uncertainty of the pandemic had passed, the team launched other, more substantial efforts, though the restaurant has remained open during the recent renovations.
