Biscuit Belly was named one of Nation’s Restaurant News’ “100 Under 100,” a list recognizing the fastest-growing restaurant chains in the country with fewer than 100 locations.
Founded in 2019 by husband-and-wife team Chad and Lauren Coulter, Biscuit Belly is redefining brunch with its fast-casual model centered around Southern biscuit sandwiches. With 14 locations and six more in various points of development, the brand saw 40% growth in 2024 and continues to expand across the United States through both corporate and franchised locations.
“Look, we’re not the first ones ever to put biscuits on a menu, but until us, it was mostly mom-and-pop places,” Chad said. “We felt we could put some strong branding on it and scale it across the Southeast and Midwest.”
Biscuit Belly sets itself apart from typical breakfast spots by focusing on made-from-scratch food, baking its biscuits fresh in-house and crafting its sauces and jams. Standout items on the chef-inspired menu include the “Mama’s Boy” and the “Boozy Bird.”
With strong unit economics and growing consumer demand, Biscuit Belly is poised for continued growth. As a privately held company, the team is focused on smart, sustainable growth, taking its time to find the right franchise partners and locations rather than chasing rapid scale. Biscuit Belly’s goal is to reach 20 units open by the end of 2026.
“It’s not all about numbers — we’d rather have fewer really great spots than a bunch of lower-performing stores,” Chad said. “We’re taking our time and making sure we can find the right spots, because ultimately, that’s going to dictate our future.”
