FSC Franchise Co. Hires Scott SirLouis to Further Growth Momentum in 2018
Established Full-Service Restaurant Operator Onboards New Chief Operating Officer

Multi-unit growth was a primary focus for FSC Franchise Co., parent company of Beef ‘O’ Brady’s and The Brass Tap, in 2017. By strengthening the support given to existing owners looking to expand and finding new passionate multi-unit operators to promote growth in untapped markets, these brands were able to develop in key states across the nation including Texas, Maryland, Arizona, Ohio and North Carolina.
To spark growth in the new year, FSC Franchise Co. hired Chief Operating Officer Scott SirLouis. SirLouis joined the company with more than 30 years of franchise industry experience, working his way up through different operations positions until reaching the executive level. In his most recent role, SirLouis was the Vice President of Strategy for Fazoli’s Restaurants where he led the development of off-premise sales programs, mobile platforms, IT, POS rollouts and reimaging strategies.
“While I enjoyed the strategy behind my previous position at Fazoli’s, I was always interested in getting back into the operational side of the business,” said SirLouis. “When this opportunity came up, I realized it was an unusual and rare chance to join a franchise concept where I not only saw the potential for growth but was also extremely impressed with the team. The same aspects that attracted me to this industry in the first place are what ultimately attracted me to Beef ‘O’ Brady’s and The Brass Tap: the energy and the people. FSC Franchise Co. prioritizes its employees in an environment that makes customers want to come back.”
SirLouis was drawn to FSC after visiting a number of Beef ‘O’ Brady’s and The Brass Tap locations along the East Coast and experiencing firsthand the vibrant atmospheres that have made these two brands thrive. By joining the team, SirLouis will be developing the systems and processes to access new revenue streams through delivery and the growth of company-owned stores, providing value to the organization by allowing both brands to focus on the localized customer experience.
“The local connection that we’ve been able to make at Beef ‘O’ Brady’s and The Brass Tap through personal and human interaction is something we’re doing better than anyone else in the industry,” said FSC Franchise Co. CEO Chris Elliot. “Experienced leaders like Scott are critical to ensuring that our environment can remain a priority as we look to expand into new markets nationwide. We’re thrilled to have him on board and look forward to growing together.”
In 2017, FSC Franchise Co. celebrated 11 new signings. Now, the brand is committed to developing in key markets throughout Illinois, New York, California and South Carolina. With SirLouis at the helm, the development team at FSC is well-positioned for future expansion.
