Just Salad Goes Even Greener By Naming First Chief Sustainability Officer

The brand saved 75,000 pounds of plastic with its reusable bowl program in 2018

Further deepening its commitment to sustainability practices, Just Salad has named Janani Lee as the brand’s first Chief Sustainability Officer, according to an article by QSR.

The health food chain is known for its flagship reusable bowl program, which reportedly saved 75,000 pounds of plastic last year and increases waste diversion by 5 percent annually, according to the article. The brand's World’s Largest Restaurant Reusable Program has even been recognized with a 
WasteWise award from the Environmental Protection Agency, according to the report.

According to the article, Lee, former Director of Supply Chain at the company, will head up the expansion of existing sustainability programs as well as the development of new efforts. Just Salad plans to transition to biodegradable fiber bowls as disposable options worldwide, develop a composting program in partnership with MBA students at Bard College and save 100,000 pounds of plastic in 2019, according to the report.

“Our reusable bowl program puts us ahead of the curve in many ways, but we’re determined to become the gold standard of sustainability in the restaurant space and beyond,” said Lee, according to the article.
