Danville, Virginia, is getting a new pizza destination this Labor Day weekend as&nbsp;<a href="https://www.mellowmushroom.com/franchising/">Mellow Mushroom</a> prepares to open. The 4,400-square-foot restaurant will be operated by&nbsp;<a href="https://www.linkedin.com/in/jon-walker-5123b5148/">Jon Walker</a>, a local business owner who already runs two successful concepts in town with his wife and&nbsp; business partner Richard Barrick&nbsp;&nbsp;<h2>Why Danville Made Sense</h2>The decision to bring&nbsp;<a href="https://1851franchise.com/mellow-mushroom/info">Mellow Mushroom</a> to Danville started with the real estate, which became available before the team had even settled on a concept.“It’s a strong location in a great area of Danville. When the previous owners approached me about the opportunity, it prompted us to step back as a team and evaluate what concept would be the best fit for both the space and the market.”Walker and Barrick began evaluating what type of restaurant would best fit both the space and the local market. His wife, Meredith, ultimately pointed them toward Mellow Mushroom, which led the group to dig deeper into the brand’s pricing, structure and overall support system while assessing how it would translate to Danville.“We spent time evaluating the brand more closely, looking at how their pricing aligns with our market, as well as their overall structure, support systems and fee model,” Walker said. “We visited a nearby location to experience the brand firsthand, and it became clear that it could translate well in Danville. After reaching out to the team, we had a very productive initial conversation that gave me confidence this could be a strong fit.”Danville’s recent growth also played a role in the decision. A Caesars casino opened in the city two years ago and now draws roughly 2 to 2.5 million visitors annually. The new Mellow Mushroom location sits within two miles of that property.“With increased traffic from Caesars, we saw an opportunity to introduce something a bit more differentiated from the typical chain options people often find when searching for dining in the area,” Walker said.With roughly 165 locations nationwide and a limited presence in the immediate area, the brand offered something distinct to both visitors and local residents while still providing Walker and his team with the backing of an established concept.<h2>From Professional Baseball to Restaurant Ownership</h2>Walker is no stranger to restaurant operations. He previously made a living in professional baseball before investing in River District Social, a 14,000-square-foot sports bar in Danville with golf simulators, bowling lanes, two bars and nearly 500 seats. He and Meredith also own Walker’s Roadside Grill, a local diner. Together, the businesses employ more than 110 people.“We’re leveraging the success we’ve built with our existing concepts to continue growing our restaurant group within the community,” Walker said. “We made the decision to purchase the property, which was an important strategic step for us. This will be my third restaurant, and I’ve really developed a strong passion for the business.”Walker said what ultimately sold him on Mellow Mushroom was the company’s culture and commitment to quality ingredients, from vegetables and dough to its meat products. After visiting the corporate team in Atlanta, he felt confident the partnership made sense.<h2>Designed With Danville in Mind</h2>The Danville location will stay true to the brand’s identity while incorporating local elements. Walker plans to include design features that pay tribute to Danville’s history as a textile and tobacco town through murals and interior details.The goal is to create a space that feels both true to Mellow Mushroom and connected to Danville. “The community can expect a strong commitment to food quality, with well-prepared products and a welcoming guest experience,”Hiring will be a major focus in the first year, and culture matters just as much to Walker as numbers. First-year success is about building the right team and giving Danville another reliable dining option. “You want people that really take pride in their job, whether they’re making pizzas or making calzones,” he said. “And then you want smiling faces delivering that food to the customer.”He is building his team, finalizing the space and preparing to introduce a new concept to a town that already knows his standards. With two established restaurants under his belt and a growing customer base in Danville, the Mellow Mushroom opening represents the next step in Walker's steady business expansion. This included a three-unit Kentucky deal, and many of the new operators came from the brand's own customer base.“Our Q1 momentum really came down to two things: strong brand affinity and a more focused franchise development effort,” said&nbsp;<a href="http://linkedin.com/in/jamie-cecil-0682a314">Jamie Cecil,</a> vice president of franchise development. “Many of our new franchisees were already customers who knew and loved the product, which speaks volumes about the strength of the brand. The refreshed model gives franchisees a more flexible way to enter new markets.&nbsp;&nbsp;"The fast-fine format has created real estate and market opportunities that were not always available within our traditional reach, and operators are responding to that flexibility," Cecil said. "But what really attracts potential franchisees is the Mellow Mushroom dining experience, regardless of real estate. That’s what people love, and that’s what they want to bring to their communities."Looking ahead, the brand continues to see opportunities across the Southeast, where there’s still significant white space. We're targeting anywhere between 2,400 to 3,000 square feet, versus our full-service model, which is targeting anything around 4,000 plus."Currently, fast fine Mellow Mushroom locations have a menu that is mostly aligned with the one offered at a full-service location, and though there isn’t a full-service bar, locations can still offer bottled and canned beer, wine and craft cocktails. Further, the brand has maintained the atmosphere it’s known for, even in the smaller footprint."One thing from a brand standpoint is we didn't want to lose who we were and our soul and our DNA. So even our fast-fine restaurants do have at least one dedicated locally commissioned mural," Jiva said. "There's still a lot of artwork and a lot of fun things to tickle the senses, as I like to say, so a lot of sight, sound, hear, smell and touch.
