Mellow Mushroom, the psychedelic pizza franchise known for its imaginative pizzas, hand-tossed stone-baked dough and unique atmosphere, is bringing that same experience into a smaller, counter-service format. The new “fast fine” prototype reflects how dining habits have changed since the COVID-19 pandemic, with a more compact footprint and a service model built around speed and efficiency.

In addition to decreasing build-out costs, the new prototype also allows locations to operate with just 15 to 20 employees, decreasing hours by almost 40% compared to the full-service model. Still, with its signature dough and “dining room liaisons,” Mellow Mushroom maintains its standards of quality and hospitality.

"The beauty about it is it's counter service, so it's less people to run," Ahsan Jiva, executive vice president of strategy and development, told Pizza Marketplace. "It's got a slimmer menu, so from the operations side, it's a little bit easier from an execution and prep side, and it's a smaller box. We're targeting anywhere between 2,400 to 3,000 square feet, versus our full-service model, which is targeting anything around 4,000 plus."

Currently, fast fine Mellow Mushroom locations have a menu that is mostly aligned with the one offered at a full-service location, and though there isn’t a full-service bar, locations can still offer bottled and canned beer, wine and craft cocktails. Further, the brand has maintained the atmosphere it’s known for, even in the smaller footprint.

"One thing from a brand standpoint is we didn't want to lose who we were and our soul and our DNA. So even our fast-fine restaurants do have at least one dedicated locally commissioned mural," Jiva said. "There's still a lot of artwork and a lot of fun things to tickle the senses, as I like to say, so a lot of sight, sound, hear, smell and touch. All those things we still want to keep as part of the brand."
