Nation’s Restaurant News: Data: The optimal table turnover time is 45 minutes

Point-of-sale provide Upserve finds the dining sweet spot for eat-in restaurants.

Eat-in restaurant owners know turning tables over faster generally leads to an increased revenue stream. A recent Nation’s Restaurant News article provided an overview of research from point-of-sale provider Upserve that found the ideal time for table turnover is 45 minutes.

According to the article, “Upserve found that the average tip increased with time spent at the table, up until about the 40- to 50-minute mark. Likewise, meal costs tended to flatline after guests had spent around 30 to 40 minutes at the table.”

Although the data varies by region, 45 minutes seems to be the sweet spot across the U.S.
