Here’s what they had to say:1851 Franchise: Frame your personal story for us. What do you want us to know?Ami Shah:&nbsp;This has been my passion because I’ve followed the brand for a long time. I’m a big fan of Paris Baguette and used to visit the corporate café in Edison. More than anything, I was drawn in because I love the brandI love their cakes and pastries. I love the ambiance and the vibe of the&nbsp;café. I like to go in, have a sip of coffee, and it makes me feel happy. It gives you an experience. Food has always been my passion. There’s something magical about baking. The aroma and the craft make everything amazing. Serving a customer a nice coffee and seeing them enjoy a warm croissant is a beautiful feeling.David Shah:&nbsp;This is Ami’s passion. Food has always been Ami’s passion, even when she was in the corporate world. She always had more joy when she went to Paris Baguette. We’re both foodies, and anytime she sees someone being served and smiling, it brings joy to both of us.We thought, why don’t we start something of our own and give back to the community? With a small business, we can create a lot of local jobs, give back, and contribute to the economy. Paris Baguette ended up being the perfect place for us because it’s where passion and profession meet.1851: What did you do before franchising, and how did you decide franchising made sense for you?Ami:&nbsp;I had a stable career, and leaving it wasn’t easy. I was in IT; I’m an engineer by profession, and I worked with Deloitte. But starting a completely new chapter with Paris Baguette feels great. I literally gave up my career because of how much I believe in this brand.David:&nbsp;I started my journey in the United States managing a Dunkin’ Donuts, and I also operated a Taco Bell, so I do have a food industry background. But by profession, I’m an engineer, and I’ve been in IT for many years.1851: What was your perception of franchising prior to becoming a franchisee, and what do you want people to know about franchising now that you are in it?David:&nbsp;My perception of franchising was that they give you the recipes and basic guidelines, and then you figure out a lot of things on your own. I’ve been part of other franchise systems, so I’ve seen how those operate when you come in. But when we got into Paris Baguette, the level of support and training they provide is on a completely different level. I have no words for it — in a good way.My team has about 15 employees, and they’ve been in training for the last four weeks. They’re not just baking products, they’re learning how to bake them perfectly. We’re getting trained on details like the exact angle to place a strawberry. It can’t lean downward; it has to be at a specific angle. That’s the level of precision they teach.When a customer walks in and buys something, and you can deliver that kind of perfection and quality, it creates a feeling that whatever they spent was worth it. You can see the smile on their face. I’ve visited many Paris Baguette cafés, and my perception has completely changed in terms of what a franchise can do and what Paris Baguette does for its franchisees.It has been an amazing experience so far. I’m very happy with the management and how they run operations. I see great career growth for everyone involved.Ami:&nbsp;It gives you confidence, knowing you’re heading in the right direction and can fully trust the franchise. I don’t want to speak negatively about other brands, but having been part of other franchises, their training doesn’t compare. Paris Baguette has its own high standards, and the training staff is exceptional.My husband and I are both part of the training. We go in with our team. I’ve been part of making croissants, learning the coffees, learning the drinks. Whatever my staff is doing, I’m learning it too. Not every owner shows up. Some owners just send their team and trust the process. But being there myself and seeing the trainers gives me extra confidence.They always say, “If you have any questions, come to us.” Nobody else says that. It’s something very positive.1851:&nbsp;What made you pick this brand? What excites you most about this company?David:&nbsp;To answer that question, like Ami mentioned, I’ll give you a little more of the story. When Ami was pregnant with our first child, she was craving sweet food. She tried Paris Baguette for the first time and fell in love with the pastries and everything about the brand. We’ve been having the brand’s cakes and pastries for the last 15 years.Ami:&nbsp;My son is 14 years old, so I can say that because I was pregnant then. And the taste I tried 15 years ago has been consistent. That gives you a positive feeling about the brand — like, wow, it’s been 15 years and whatever I tried back then still has the exact same quality and perfection. That’s the beauty of the brand. The brand already has a large global presence, and by 2030, Paris Baguette plans to expand significantly in the United States. They’re growing, and the way they’re growing and supporting their franchisees sets everyone up for success. At the same time, they’re taking care of customers in a wonderful way. If you’re a customer and you go to the same coffee shop, I won’t name names, you’ll see the exact same menu every time you go. You hardly ever see that menu change.David:&nbsp;Over here, you have 100-plus items. You will never get bored. Even if you come a hundred times, you’ll always have something new to try. And by the time you’re done with your list, the menu has changed again because now there’s a new seasonal item. We have a new menu for Thanksgiving, a new one for Christmas, a new one for Mother’s Day, Valentine’s Day and people enjoy that.And we enjoy, as a brand, being part of someone’s joy. For example, if you have an anniversary and you buy a cake from us, we’re part of that celebration. It&nbsp; brings a big joy to me knowing we are part of someone’s special moment and helping put a smile on their face.1851:&nbsp;What do you hope to achieve with your business? What are your plans for growth?&nbsp;David:&nbsp;We’re not focused on money. We believe in giving back to the community. Our team includes employees from diverse backgrounds. Some are students, and others come from different communities, and we are committed to giving everyone an opportunity to grow. We want our neighbors and our team to feel supported. They feel like family more than employees. We don’t treat an employee like “just an employee,” and that makes us unique in terms of how we want to grow.For growth, I want my team and my employees to grow with us because, as I mentioned, they’re family to me. The way we see success is by creating jobs and contributing as a small business. In America, small businesses are the number-one job creators, so we’re doing our part by hiring people in our community. As we grow, we’ll create more jobs and give back even more.Our growth plan is to expand. Construction in Freehold is about to start, and the permits are already filed. We have 18 more locations lined up and are planning to build a strong corporate environment where we can grow together.Ami:&nbsp;We both love talking to people and consider ourselves people persons. In my IT job, I work remotely, so it is mostly home-based, and we both work from home. I am really looking forward to this business because it allows us to serve people and give customers a unique experience, which is something we truly enjoy.1851:&nbsp;What advice do you have for other people thinking about becoming franchise owners? David:&nbsp;My advice for other franchise owners is this: If food is your passion, if hospitality is your passion, there is never a wrong time to jump into franchising. What do you want us to know?Pratham Patel:&nbsp;I’m 24 years old and graduated from Georgia Tech in May 2023 with a degree in computer science. Georgia Tech’s CS program is consistently ranked among the best in the country, and it really shaped the way I think — analytically, strategically, and with a long-term mindset. After graduation, I worked a couple of corporate roles in Atlanta before ultimately moving back home to Warner Robins.I come from a very business-oriented family background, primarily in retail — liquor stores, gas stations, and similar ventures — so entrepreneurship has always been around me. This is my first time stepping into the food and beverage industry on my own, and it’s a new challenge I’m excited to take on. Having lived here my entire life, I know the community and the market inside and out, which gives me a strong foundation as I build something here.1851: What did you do before franchising, and how did you decide franchising made sense for you?Patel:&nbsp;In my first role, I worked on implementing advanced business analytics strategies for a mobile ordering platform widely used in the hospitality industry. After that, I joined Boeing as a systems data analyst supporting the C-17 program here in my hometown. When I experienced a layoff at Boeing, it forced me to take a step back and really think about what I wanted long term. That’s when I realized I’d always wanted to build something of my own — just like my parents did.I knew stepping into business ownership wouldn’t be easy, especially as a first-time operator. Building a concept entirely from scratch is challenging and requires constant innovation. What attracted me to the franchise model was the structure — the framework is already proven, and the concept has been tested. My job is to execute it at a high level. I bring youthful energy and creative thinking to the table, but having that established foundation gave me the confidence to take the leap.1851: What was your perception of franchising prior to becoming a franchisee, and what do you want people to know about franchising now that you are in it?Patel:&nbsp;Before going through this process, I didn’t really understand what franchising actually provides. I had a pretty negative perception — I assumed it was mostly about high royalty fees with limited support in return. But once I started working with The Brass Tap, I quickly realized they approach it as a true partnership. They see it as an investment in you as an operator, not just a transaction.When I began this journey, I had no experience negotiating leases, navigating tenant improvement allowances, or running food and hospitality operations. He helped prepare me for every stage of the process, and because of that guidance, I now feel extremely confident handling complex lease negotiations and development decisions. What are your plans for growth?&nbsp;Patel:&nbsp;I want this to be&nbsp;the spot in the 478 area code where everyone can just come together and have a good time. For my location in Warner Robins, I’m investing in a high-tech AV system and a modern lighting package, which no other location has ever done before. I also looked at one of their best-performing locations in California and saw how they utilized their patio and interior design. I’m taking elements from that success to build something new here.&nbsp;Long term, I’m focused on growth. Once we’re fully operational and have achieved great success, I plan to explore opening additional locations across the Southeast, with markets like Charlotte and Miami already on my radar. My goal is to position The Brass Tap as a leading name in the bar and nightlife scene, on par with the biggest players in the region.Looking ahead, I also have a vision of developing rooftop concepts and creating locations connected to sports-driven facilities, including pickleball, to bring together nightlife, community, and active lifestyle experiences under one brand.1851:&nbsp;Is there anything else about your story you want us to know?Patel:&nbsp;I don’t view this as just a business investment — I see it as an investment in the community that raised me. Giving back to this city is deeply important to me, and community involvement is a core part of my vision for The Brass Tap. My goal isn’t just to open a successful bar, but to build something that truly contributes — whether that’s partnering with local charities, hosting fundraisers, supporting small businesses, or backing community initiatives across Middle Georgia.I want The Brass Tap to be more than a place for great drinks and nightlife — I want it to be a place that brings people together and strengthens the community we all share. We opened our TWO MEN AND A TRUCK location at 153 Bridgeland Avenue 16 years ago, and we are moving into our 17th year soon. We run a very team-oriented company culture, and I actually see our business as a sports franchise. Our movers are essentially athletes who lift and move furniture all day.1851: What did you do before franchising, and how did you decide franchising made sense for you?Bailey:&nbsp;Prior to franchising, I worked in the automotive industry for 21 years. After that, I was involved in a home renovations business with my brother, which eventually grew to serve all of Ontario and Alberta. Around 2009, the recession led to a shift in that home renovations business, so I decided to pursue a different direction. I wanted to do my own thing, separate from working with my brother, so I started with one TWO MEN AND A TRUCK franchise and have since expanded to five units.1851: What was your perception of franchising prior to becoming a franchisee, and what do you want people to know about franchising now that you are in it?Bailey:&nbsp;I initially viewed franchising as just buying into an established brand and system, noticing that many large businesses like McDonald’s and Tim Hortons operate that way. Now that I am in it, I highly recommend becoming a franchisee because of the incredible support system available when challenges arise. However, I want people to know that a good brand does not automatically run itself. Starting a new business requires immense effort and hard work; you have to be actively involved in making it grow.1851: What made you pick this brand? We handle complex, last-minute moves, like shipping a player’s belongings from Florida to Sacramento during the pandemic, which really demonstrates our commitment to finding solutions for any problem. We are also heavily involved in charity events, including the annual&nbsp;Movers for Moms initiative, and for the last five or six years, we have coordinated Christmas shoebox deliveries for women in shelters and in abusive relationships across Toronto.1851: What advice do you have for other people thinking about becoming franchise owners?Bailey:&nbsp;New owners must be ready to work hard and stay closely involved in the business, especially in the early stages. I have always believed in being available when needed, and I still share my cell phone number for direct contact. Here’s what he had to say:1851 Franchise: Frame your personal story for us. What do you want us to know?Jason DuBose: I’m a proud Texan by birth, but South Carolina has been home since my youth. My father was in the Air Force, which is how we came to Sumter. This is where I met my wife, Tracy. I was actually her first kiss in middle school! We’ve been together for nearly 30 years and married for over 20, and our 18-year-old son, Mason, graduates from high school this year.Family is the center of my universe. Between Tracy and me, we have one surviving parent, her mother, Pailyn. She goes by Lyn and is just about the sweetest, toughest little old lady I’ve ever met. She’s survived multiple bouts of cancer and still manages a koi pond and four big rescue dogs. Being her support team is an example of exactly what Griswold is about.1851: What did you do before franchising, and how did you decide franchising made sense for you?DuBose:&nbsp;I spent almost 30 years in human resources across a wild range of industries, everything from timber processing and meatpacking to my last role in the "clean and conscious" beauty space.I'd always thought about maybe starting a business of my own, but the moment actually kind of came through volunteering. I went through rookie school to become a volunteer firefighter at age 50. While out on calls, I kept seeing seniors struggling with falls, welfare checks and other situations where they simply needed help. I looked at various service brands, but home care was the only thing that touched me personally.1851: What was your perception of franchising before becoming a franchisee, and what do you want people to know about franchising now that you are in it?DuBose:&nbsp;I don’t think a lot of people realize that two out of three businesses they pass on the road are actually franchises. I knew I wanted to build something, but I didn’t necessarily have a unique idea in mind. Franchising offered a proven system I could get behind.Now that I’m in it, I realize how much the new owner perspective matters. During my research, I specifically asked to talk to people who had been in business for less than six months. Hearing about their current pain points, the startup challenges, was much more relevant to me than talking to someone ten years in. What are your plans for growth?&nbsp;DuBose:&nbsp;I hope that we can do a lot of good first and foremost.
