As major quick-service brands grapple with declining breakfast sales and shifting consumer habits, Paris Baguette is positioning themselves as a leader in the space, redefining what the morning routine can look like with fresher, more elevated breakfast items and coffee. Rather than chasing efficiency and drive-thru speed, they are catering to the discerning tastes of today’s breakfast and coffee lovers.
Recent industry data underscores a significant transformation in breakfast and coffee culture. According to the National Coffee Association, daily coffee consumption among American adults has reached peak levels, with two-thirds of people reporting they had coffee in the past day — more than even tap and bottled water. At the same time, the breakfast food market is projected to grow from $210.80 billion in 2025 to $255 billion by 2030, reflecting consumers’ growing demand for great breakfast options. As people continue to seek out fresher, higher-quality and more nutritious breakfast options, trends are changing in the restaurant space, and Paris Baguette is in a unique position to address the growing need.
“There’s something magical about stepping into an authentic bakery, where the visual appeal and aroma of freshly made products create a truly immersive experience,” said Darren Tipton, CEO. “We’re on a quest to re-establish the neighborhood bakery café as the heart of the community, and offering breakfast options we know people are craving has been a key contributor to our progress.”
In addition to the breads, cakes, and pastries that are made fresh daily in each café, Paris Baguette’s partnership with Lavazza further elevates their coffee platform, ensuring guests have a premium experience each time.
Recognizing the importance of breakfast, Paris Baguette has recently leaned more heavily into the morning daypart. In January, they launched the Sourdough Supreme breakfast sandwich and began promoting it, alongside coffee, in new advertising campaigns. Then, in March, traditional cafés began opening at 6 a.m. — earlier than previous operating hours — to capture more early-morning traffic and establish themselves as a staple in guests’ morning routines.
“The 7 to 8 a.m. hour has always been a meaningful hour of sales for us,” said Nick Scaccio, Chief Development Officer. “We saw that breakfast items and coffee made up a significant portion of our top-selling items. Many brands in the coffee space open at 5 or 6 a.m., so we piloted 6 a.m. openings across a segment of our cafés. The impact was quite meaningful, and we later launched system-wide.”
In the pilot, some cafés saw sales increases of 5% or more. Since rolling the initiative out nationally, café sales have risen, on average, by about 3%.
These increases are a testament to the growing demand for high-quality, grab-and-go options that don’t sacrifice freshness or experience. While many quick-service brands are struggling to maintain foot traffic, relying heavily on drive-thru sales, Paris Baguette’s approach — anchored in premium, in-café experiences — has proven to be a winning formula. The shift is especially significant as the breakfast market grows and more guests seek convenient, but quality, options that fit their busy lifestyles.
Paris Baguette’s model delivers on both of these needs, offering freshly made pastries, breads, sandwiches, and other grab-and-go items that can be selected quickly and efficiently, but in an environment that encourages guests to linger and enjoy the ambiance. Their focus on the in-café experience, through a rich design and inviting product displays, creates a sense of connection and contributes to a morning ritual in a way far beyond what a drive-thru can offer.
“The landscape is changing rapidly, and brands that want to lead must be willing to evolve,” Tipton said. “Our commitment to innovation and flexibility — while never compromising on quality or the guest experience — has been the key to our growth. By pairing our bakery heritage with a modern grab-and-go sensibility, we’re uniquely positioned to capture the next generation of breakfast and coffee lovers.”
