After testing the new model on the Montclair State University campus in New Jersey, the Mexican restaurant saw a 20% increase in sales and average service times cut in half.While the brand will keep most of its core items on the menu, the ACE model now gives customers the option to customize Cal Tort’s classic creations in a hybrid menu format.“We’re not ditching what made us what we are today,” California Tortilla CEO Bob Phillips told Restaurant Business. “We’re known for curated menu items.
