Greg Vojnovic of The Melt was recently featured on the “Restaurant Rockstars” podcast, where he joined host Roger Beaudoin to discuss the fast casual brand’s impressive growth trajectory.
Drawing on his decades of experience with major restaurant brands, including Popeyes and Inspire Brands, Vojnovic explained why successful restaurant operations depend less on chasing financial metrics and more on creating an environment where employees can consistently deliver exceptional food and hospitality.
“It’s about operational discipline, putting together an organization and a culture where people can have a great time and enjoy themselves and be treated with respect,” he said.
Throughout the conversation, Vojnovic highlighted The Melt’s distinctive “polished fast casual” positioning, which offers premium, chef-inspired comfort food like its signature MeltBurger featuring a blend of premium Angus & Wagyu beef. He explained how the brand’s “I Love It Here” culture has become central to its success, helping attract and retain strong employees, develop leaders from within and deliver consistently positive guest experiences.
Vojnovic also discussed The Melt’s financial performance, including its transformation from a concept averaging approximately $700,000 in annual unit sales to one generating roughly $3.5 million per restaurant. He pointed to the brand’s Palo Alto location, which now generates $6.1 million annually from just 2,200 square feet, as an example of what strong operations, hospitality and efficient throughput can accomplish. He also shared how The Melt has built a successful late-night and delivery business, with about 40% of sales after 8 p.m. and another 40% through delivery.
With plans to reach 80 corporate restaurants across California and Arizona by 2030, the brand is now seeking experienced franchise partners to bring its proven model into new markets.
“That’s why we decided to franchise,” he said. “We’ve got this great model, and we need help defending our position within the industry.”
