By the end of 2019, Harper, along with his business partners Jessica Harper, James Clardy and Sandi Clardy, will have opened their first&nbsp;<a href="https://1851franchise.com/eggsupgrill/latest-stories.html" style="background-color:transparent; border:0px; box-sizing:border-box; color:rgb(43, 179, 199); margin:0px; padding:0px; text-decoration-line:none" target="_blank">Eggs Up Grill</a>&nbsp;restaurant, located in the Heath Brook Commons in Ocala, Florida. This location will also be the brand&rsquo;s first location in the Sunshine State.&nbsp;

Harper, a Georgia native who has lived in Ocala for almost 20 years, first got into the franchising game in 2001 when he opened his first Zaxby&rsquo;s franchise in central Florida.&nbsp;Business boomed, so he proceeded to open up&nbsp;<a href="https://1851franchise.com/eggsupgrill/under-ceo-ricky-richardson-s-leadership-eggs-up-grill-launches-strategic-plan-to-reach-100-restaurants-by-mid-2022-2710406" style="background-color:transparent; border:0px; box-sizing:border-box; color:rgb(43, 179, 199); margin:0px; padding:0px; text-decoration-line:none" target="_blank">more locations in the region</a>. He plans to have a grand total of nine Zaxby&rsquo;s by the end of 2020.&nbsp;

&ldquo;It was one of those &lsquo;strike while the iron is hot&rsquo; things and we wanted to bring more concepts and offer more restaurant variety to our hometown,&rdquo; said Harper of his decision to bring Zaxby&rsquo;s to the area.&nbsp;

Like Zaxby&rsquo;s, Eggs Up Grill primarily operates in the southern United States and focuses on providing a welcoming and comfortable atmosphere. Eggs Up Grill emphasizes its community connection through local franchise partners - truly &ldquo;neighbors serving neighbors.&rdquo;

Harper is excited to introduce Ocala to Eggs Up Grill, which is rapidly expanding throughout the southeastern U.S.&nbsp;

Located in central Florida&rsquo;s Marion County, which is less than one hour south of Gainesville and just over an hour northwest of Orlando, Ocala and its surrounding areas have an estimated total of more than 350,000 people. Harper described Ocala as a large community with many families&mdash;one in which the &ldquo;family-focused concept&rdquo; Eggs Up Grill would do well. He plans to open his other two Eggs Up Grill restaurants in Marion County as well.&nbsp;

Harper&rsquo;s journey to Eggs Up Grill started when he spoke with Shuckin&rsquo; Shack founder and CEO Jonathan Weathington. Harper was already proceeding with his Shuckin&rsquo; Shack plans, which involve opening a total of two or three stores, when he told Weathington he&rsquo;d like to get into the breakfast segment. Weathington suggested he check out Eggs Up Grill.&nbsp;

&ldquo;He compared it to eating breakfast with your grandfather and I was instantly sold,&rdquo; Harper said. &ldquo;I visited one in Albany, Georgia and it won me over. The owner and I spent an hour chatting. I loved the warm, welcome and attentive service the restaurant had provided; it encompassed all the feel-good words. And the food was terrific as well.&rdquo;

The brand&rsquo;s focus on atmosphere fits in with Harper&rsquo;s own management philosophy.&nbsp;

&ldquo;I teach my managers that it&rsquo;s all about being in your comfort zone because you want your paying customer to be in their comfort zone,&rdquo; he said.

&ldquo;Public schools are our main focus and I believe they need the most attention because of their limited budget,&rdquo; Harper said. &ldquo;We market alongside various schools and help with athletic programs, different clubs and whatever the kids are interested in to help.&rdquo;

As busy as Harper gets with all of his restaurants and community efforts, he does find time to rest.&nbsp;

&ldquo;My wife and I love to travel and boat,&rdquo; he said. &ldquo;We are coming to a stage in our lives where we work for three months or so and then take a week-long break. In September we&rsquo;re going to Colorado.&rdquo;

In previous businesses, I’d hired coaches to help me grow, but whether their advice worked or not, I still paid for it. When I started thinking about the restoration business, I worked for another company in the space. They were a mom-and-pop that grew quickly but didn’t learn the lessons needed to sustain that growth, and eventually they had to scale back. I didn’t want to spend 25 years stumbling through how to run a business.What led me to this particular franchise was the organization’s innovative mindset. AI is here to stay, and it’s going to change things fast. What do you want us to know about your journey into franchising?Kevin Lewis: My journey to franchising really started when I moved to Florida. I moved from Tennessee. One thing that was taught to us is that home improvement tends to be resistant to economic downturns. And that’s one thing that drew me in.Another thing I found intriguing is that when I was auditing, I would send an audit report out to whatever defense company I was auditing. But you would never see the results of your work. It was probably years in the making because any findings could be adjudicated five or 10 years down the road (depending on when the contract closed). So, one thing I like about painting and home improvement is you can always see the fruits of your work. You can see the end effort. It gives a sense of accomplishment.1851: What was your perception of franchising before you became a franchisee and what do you want people to know about franchising now that you’re in it?Kevin: One, that it was too expensive to get into. Because when you think of franchising, you think of the major chain brands. You don’t really realize that the cost of entry is there for somebody who’s just wanting to break the surface. I got a better impression when one of my friends, one of my lieutenants from Afghanistan actually, got into franchising. It was a lot of hard work at the beginning but the amount of independence he has now and the financial security he has now was appealing. You don’t get into business for yourself to work it as a job. You work it as a business. What’s your peace of mind worth? What’s your freedom worth to you? You can continue in a safe, routine job. But you’re always going to be dependent on other people as to when you can take off and what you can do. They like to recruit military because we train, from private up to officer, to be able to do the next person’s job. We do it through repetition and SOPs.
