Many restaurants that specialize in breakfast offerings are making menus interesting with more options than the usual bacon and eggs. 

According to a recent article in Nation's Restaurant News, by diversifying meals to include beef, duck, seafood and even plant-based proteins, restaurants like Famous Toastery are attracting more consumers. 

The brand offers menu items including a Lobster Benedict and the New Yorker, which is scrambled eggs, smoked salmon and onions with a choice of hash browns, grits or fruit and toast. 

“We have had a lot of success with putting seafood on the menu,” said CEO and Founder Robert Maynard. “We continue to try new things. If you are not trying, you’re dying.”
