Lawrence Journal-World: Slim Chickens To Open In Lawrence

The better chicken segment is booming in Lawrence, with a new Slim Chickens location opening early next year.

As the better chicken segment booms in Lawrence, Slim Chickens is entering the market with the help of franchisee Mark Killeen. Renovating a former KFC, the restaurant is expected to open early next year.
 
Killeen already has plans underway for a Wichita and second Lawrence location, but opening order could shift with construction delays.
 
Despite many competitors entering the market, Killeen believes that Slim Chickens fresh, never frozen hand made food and variety of dipping sauces will set it apart from other area concepts.
 
“You are going to have choice,” Killeen said. “You are not going to have to stick to two or three items. You have a lot of flavors to choose from, and great variety is something people really like to have.”
 
Killeen believes the market could support a couple of Slim Chickens restaurant and that he will have three i Kansas over the next six months.
