QSR: The NYC Fast Casual Hoping to Sell 100 Units in 2018

With three open units, the brand is setting the bar high for its 2018 development efforts.

Although The Hummus & Pita Co. currently only has three units open in New York City, the brand has set themselves up for major growth this year. According to a recent QSR Magazine article, the brand has three more restaurants being built–each part of a five-unit deal–and is looking to sell at least 100 locations in 2018.

This seemingly lofty goal is driven by the fact that the brand is confident in the market it’s targeting–Americanized Mediterranean. Co-founder Dave Pesso notes that everyone has hummus in their fridge nowadays and it will soon be as much of a staple as spaghetti and meatballs in any American household. This is also why the brand believes they don’t need to associate with one ethnicity to be a successful well-known brand.

“We wanted to have the best of what our family is, because our family’s background is Greek-, Turkish-, Israeli-American; we’re a mixture of what America is,” said Pesso. “If you come into our place, you’ll see a gyro, which is Greek, next to a shawarma, which is Middle Eastern-Israeli-Palestinian. We have Turkish Salad, Moroccan Beans, Spanish Eggplant, Moroccan carrots, Turkish Meatballs … a mixture of everything. When someone comes to us, they’re not coming for Greek food or Israeli food, they're coming for healthy, delicious, craveable food.”

Because of this focus on great food, there are lines out the door at their New York locations with people of all backgrounds and lifestyles craving their food. To succeed as a franchise and bring this vibe across the country, The Hummus & Pita Co. has invested significantly in manual and standard procedures. Franchisee prospects experience discovery day at their Chelsea location to see the atmosphere and the way they operate, which will help get the brand closer to its 100-unit sold mark this year.
