Schlotzsky's Deli Schedules Chain-wide Renovations Before Summer, Seeks to Continue Reaping Higher Sales

Fast-casual sandwich franchise is rebranding after recently renovated locations have seen a 9% sales increase.

A fresh coat of paint and some rebranding are on the horizon for Schlotzsky’s Deli. The fast-casual food service is opting for renovations as a means to increase sales.

Schlotzsky’s Deli has already rebranded 40 restaurants, transforming them into upscale eateries. The brand's president, Kelly Roddy, told Restaurant Business that the completely overhauled stores are averaging a 9% sales increase from year-to-year, making franchisees eager to rebrand and embrace the restaurant’s goal despite its costs.

According to Restaurant Business, a complete makeover will cost roughly $125,000. “The chain has also put together a lighter recast for newer stores that don’t need as much of a facelift. [Roddy] pegs the cost of that remodeling at about $30,000 and projects it will result in a sales lift of about 10%.”

The renovation process overall seeks to reinvent the menu, redesign and rebrand, updating the space and adding dishes such as tacos and sliders. According to Roddy, the franchise plans to rebrand 207 locations by mid-June and an additional 100 locations by the end of 2019.
