I have dedicated most of my life to public service, but after nearly 13 years of law enforcement, between my time as a corrections and police officer, I wanted to move on. My wife, Mary, works in a cancer treatment center. We’ve always prioritized being community oriented.&nbsp;We discovered&nbsp;BIGGBY® COFFEE and thought the product was amazing. We learned more about the company’s values and how they treat their people and what they believe in, and we were sold. So, Mary and I, just a few months after discovering&nbsp;BIGGBY®, signed up.1851: What was your perception of franchising prior to becoming a franchisee, and what do you want people to know about franchising now that you are in it?Novak:&nbsp;I never really considered franchising much, but I always knew I wanted to start my own business.&nbsp;We looked into Subway once upon a time, but that was so many years ago and we never went with it.Franchising is very structured, which is great for us because that’s what we were looking for.&nbsp;You get that established framework, and you also get to become a part of a community, not just with your local community, but the corporate community, as well. There’s not much I can advise on it yet, but I think it’s important to know what you’re getting into. Running a business is going to take a lot of time and effort, and blood sweat and tears. I think it’s worth it, just keep pushing forward.1851:&nbsp;What made you pick this brand? What excites you most about this company?Novak:&nbsp;I was introduced to&nbsp;BIGGBY® early last year when a new location opened up. They were providing drinks in the area and I went to check it out. I really enjoyed the product. I’ve had negative experiences at other coffee chains but not with&nbsp;BIGGBY®. I really enjoyed the beverage and felt good about it.I really started looking into the company in February of last year. I looked into what they believe in, how they operate, how they treat their people and how they give back to the community. I kept seeing incredibly positive things and was discovering new things about&nbsp;BIGGBY® that you wouldn’t normally expect from a company in a corporate environment. We were sold by May.I really love the idea of being involved in the community, as serving my community has essentially been the focus of my entire life. I look at it like this: Since many people start their mornings at a coffee shop, it’s our job to set the tone. If someone comes in and isn’t having the best day, they might remember that good cup of coffee. I just love having the opportunity to improve somebody’s mood.1851:&nbsp;What do you hope to achieve with your business? What are your plans for growth?&nbsp;Novak:&nbsp;Growth is always our mindset. We want to have more locations, because not only does that provide the opportunity to serve more communities, but it also offers more opportunities for our employees to grow, as well. We’re really focused on people. We want to serve high-quality beverages consistently and create a work environment that people will enjoy.People not really wanting to go to the job they have has been one of the main workforce problems in the last 30 to 40 years. And many places don’t do much to solve that problem except for an occasional bonus. We want to transcend that. We want our employees to come here and understand that yes, this is work, but we don’t want our staff to leave feeling exhausted and disappointed. We want our employees to feel energized and good about what they do.1851:&nbsp;What is the one thing about your story you want us to know?Novak:&nbsp;I always circle back to the idea of community. To express that, we have a large dining area inside our shop. We want to create a safe space and a comfortable environment. If you’ve ever felt marginalized in your life, you don’t have to worry about that here. You come in, you relax and you live your best life.BIGGBY® COFFEE exists to support you in living the life you love. That’s what we believe. One of the best parts about our shop is that we’re larger and have more room to accommodate guests. We have a media area where we hope to hold movies. We also have a smaller, more comfortable area by a fireplace that I like to call the library space. We also have little nooks that can serve as private study areas where you might bring work, or schoolwork, and allow you to be alone in your own little space.1851:&nbsp;What advice do you have for other people thinking about becoming a franchise owner?Novak: It harkens back to research. It’s important to do your own research and also to know the people. That’s one of the many reasons I decided to sign with them.You should always make an effort to learn the inner workings of the entire environment. Ask questions, and ask how the franchisor will support you. It’s also important to note, realistically, no matter how prepared you are, you’ll discover you’re woefully unprepared. You can only plan as best as you can. But going through the tough times, you’ll grow and find you’re able to rise to the occasion. As far as advice goes, I think it’s really important to do research, get to know the people and focus on your attitude. What do you want us to know?Pratham Patel:&nbsp;I’m 24 years old and graduated from Georgia Tech in May 2023 with a degree in computer science. Georgia Tech’s CS program is consistently ranked among the best in the country, and it really shaped the way I think — analytically, strategically, and with a long-term mindset. After graduation, I worked a couple of corporate roles in Atlanta before ultimately moving back home to Warner Robins.I come from a very business-oriented family background, primarily in retail — liquor stores, gas stations, and similar ventures — so entrepreneurship has always been around me. This is my first time stepping into the food and beverage industry on my own, and it’s a new challenge I’m excited to take on. Having lived here my entire life, I know the community and the market inside and out, which gives me a strong foundation as I build something here.1851: What did you do before franchising, and how did you decide franchising made sense for you?Patel:&nbsp;In my first role, I worked on implementing advanced business analytics strategies for a mobile ordering platform widely used in the hospitality industry. After that, I joined Boeing as a systems data analyst supporting the C-17 program here in my hometown. When I experienced a layoff at Boeing, it forced me to take a step back and really think about what I wanted long term. That’s when I realized I’d always wanted to build something of my own — just like my parents did.I knew stepping into business ownership wouldn’t be easy, especially as a first-time operator. Building a concept entirely from scratch is challenging and requires constant innovation. What attracted me to the franchise model was the structure — the framework is already proven, and the concept has been tested. My job is to execute it at a high level. I bring youthful energy and creative thinking to the table, but having that established foundation gave me the confidence to take the leap.1851: What was your perception of franchising prior to becoming a franchisee, and what do you want people to know about franchising now that you are in it?Patel:&nbsp;Before going through this process, I didn’t really understand what franchising actually provides. I had a pretty negative perception — I assumed it was mostly about high royalty fees with limited support in return. But once I started working with The Brass Tap, I quickly realized they approach it as a true partnership. They see it as an investment in you as an operator, not just a transaction.When I began this journey, I had no experience negotiating leases, navigating tenant improvement allowances, or running food and hospitality operations. He helped prepare me for every stage of the process, and because of that guidance, I now feel extremely confident handling complex lease negotiations and development decisions. For my location in Warner Robins, I’m investing in a high-tech AV system and a modern lighting package, which no other location has ever done before. I also looked at one of their best-performing locations in California and saw how they utilized their patio and interior design. I’m taking elements from that success to build something new here.&nbsp;Long term, I’m focused on growth. Once we’re fully operational and have achieved great success, I plan to explore opening additional locations across the Southeast, with markets like Charlotte and Miami already on my radar. My goal is to position The Brass Tap as a leading name in the bar and nightlife scene, on par with the biggest players in the region.Looking ahead, I also have a vision of developing rooftop concepts and creating locations connected to sports-driven facilities, including pickleball, to bring together nightlife, community, and active lifestyle experiences under one brand.1851:&nbsp;Is there anything else about your story you want us to know?Patel:&nbsp;I don’t view this as just a business investment — I see it as an investment in the community that raised me. Giving back to this city is deeply important to me, and community involvement is a core part of my vision for The Brass Tap. She’s survived multiple bouts of cancer and still manages a koi pond and four big rescue dogs. Being her support team is an example of exactly what Griswold is about.1851: What did you do before franchising, and how did you decide franchising made sense for you?DuBose:&nbsp;I spent almost 30 years in human resources across a wild range of industries, everything from timber processing and meatpacking to my last role in the "clean and conscious" beauty space.I'd always thought about maybe starting a business of my own, but the moment actually kind of came through volunteering. I went through rookie school to become a volunteer firefighter at age 50. While out on calls, I kept seeing seniors struggling with falls, welfare checks and other situations where they simply needed help. I looked at various service brands, but home care was the only thing that touched me personally.1851: What was your perception of franchising before becoming a franchisee, and what do you want people to know about franchising now that you are in it?DuBose:&nbsp;I don’t think a lot of people realize that two out of three businesses they pass on the road are actually franchises. I knew I wanted to build something, but I didn’t necessarily have a unique idea in mind. Franchising offered a proven system I could get behind.Now that I’m in it, I realize how much the new owner perspective matters. During my research, I specifically asked to talk to people who had been in business for less than six months. Hearing about their current pain points, the startup challenges, was much more relevant to me than talking to someone ten years in. Also, do your research on the logistics. I wish I’d had a deeper understanding of the ROBS funding process before I started. Most importantly, find a brand that fits you.
