In 1956, a man named Mike opened a small sub shop in the seaside town of Point Pleasant, New Jersey. Today, what started as a modest mom-and-pop business has grown into the fastest growing chain in the country&#8212;Jersey Mike&#8217;s Subs. On Oct. 14, Jersey Mike&#8217;s, best known for its premium sliced and grilled subs and freshly-baked breads, celebrated a new milestone in its continuing growth: The opening of its 1,000th restaurant. &#8220;It may have taken us 40 years to get to 1,000 restaurants, but Jersey Mike&#8217;s expects to double that in the next four years, reaching 2,000 locations by 2019,&#8221; Peter Cancro, the founder of Jersey Mike&#8217;s, said in a press release. &#8220;We are just getting started, and today we celebrate the owners and their crews, and everyone who helped to achieve this milestone.&#8221;
