Two new proteins have hit the brand’s menu permanently this year.

Schlotzsky’s permanent menu now includes shrimp and brisket according to a recent Nation’s Restaurant News article. As a response to consumer demand, the company introduced shrimp as a new seafood option last spring.
The Shrimp Original sandwich outperformed sales expectations by double or triple according to president Kelly Roddy. The sandwich includes steamed shrimp with cream cheese, chipotle mayonnaise, chipotle pesto, cheddar, mozzarella, Parmsan, black olives red onions, lettuce, tomatoes and mustard for good measure.
After seeing the success of shrimp on the menu, brisket was next on the list for testing due to the heritage of the Shlotzsky’s brand, which is based in Austin.
“Brisket is one of the things that people actually seek out when they come to Austin, so why not bring that to Schlotzsky’s everywhere?” he said.
