What once seemed like an industry exclusive to hot dogs and coffee, food trucks can now be found in virtually every major city across the nation. Fast Casual, in a four-part series, explores how the food truck industry evolved into the powerhouse it is today, and where it might be heading.

According to FoodTruckHQ, the food truck industry is the fastest-growing channel in today’s foodservice industry, having growing 12.4 throughout the past five years. Currently worth $650 million, the industry could hit $2.7 billion by the end of 2017. Trying to pinpoint how the food truck trend first began and caught fire, Fast Casual says many think it began at the start of the new millennium, with social media playing a major role in it’s boon.
