Dillas Quesadillas is not trying to be another Mexican restaurant. In fact, that is the point.

The emerging fast casual franchise has spent the past 12 years building an entirely new category around one focused idea: primo quesadilla meals. By narrowing its menu around a craveable, portable product and pairing it with fries and a drink, Dillas has created a model that feels familiar to consumers but distinct in the restaurant landscape.

“We’re the only quesadilla-focused QSR [quick-service restaurant], so we were like, ‘Let’s go,’” said co-founder Maggie Gordon. “We’ve got to get to market and dominate this niche.”

Creating a New Quesadilla Category

That focus is what makes Dillas one of 1851 Franchise’s Most Innovative Franchise Concepts. Rather than competing directly with burrito, taco or bowl brands, Dillas is carving out white space with a quesadilla-first model designed for speed, customization and repeat visits.

“While we do focus on quesadillas, it’s really just a vehicle,” Maggie said. “We offer a wide range of flavors — American comfort food, Southern flavors, things everyone resonates with. It’s not just Mexican food.”

The result is a brand that combines the convenience of QSR with the quality and freshness of fast casual. Co-founder Kyle Gordon calls it “QSR+,” meaning everything guests love about quick-service convenience, plus the food quality and care of a fast casual experience.

“We cook our quesadillas in a way that nobody else does,” Kyle said. “That level of quality combined with speed is the magic.”

Built for Convenience and Simple Operations

Dillas’ innovation is not just in the product. It is also in the box. Roughly 85% of sales come through convenience channels like drive-thru, pickup and delivery, making the concept especially well-suited for how consumers eat today. The brand has leaned into that behavior with a simplified menu, streamlined operations and a real estate strategy that prioritizes drive-thru and efficient second-generation sites whenever possible.

“We leaned into the data,” Kyle said. “Fries are our number one seller, along with quesadillas. So now, every meal includes fries and a drink.”

Dillas has built its model around what Kyle calls low “time to train,” with fresh prep but simple steps, giving teams the ability to deliver quality without overcomplicating the kitchen.

“We’ve designed our processes to be simple,” Kyle said. “The systems are simple, but the ingredients are fresh and high-quality. So it’s easy to pick up, but still delivers a primo product.”

The brand is also using technology and AI to support scheduling, prep, forecasting, training and operational insights. But the Gordons are clear that technology is meant to support the people inside the restaurant. “AI can’t replicate culture,” Kyle said. “AI can’t replicate community and connection. Those are 95% of the equation.”

Growing With the Right Franchise Partners

That people-first mentality has shaped the franchise strategy from the beginning. Dillas is looking for operators who understand restaurants, believe in the brand’s purpose and want to build strong local teams, not passive investors chasing a trend.

“We’ve worked too hard to just say yes to anyone,” Kyle said. “We want to open strong, well-vetted, great locations with people who speak our language. People are driving five, six, seven, eight miles just to get to us. But if we can get closer to them, build more units — that’s when we’re really going to take off.”

And as the brand grows, the mission remains the same. “We don’t want to just be ‘a restaurant in the community,’” Maggie said. “We want to be the community’s restaurant.”

That combination of a focused product, a convenience-first model, tech-enabled operations and a community-driven culture is what makes Dillas Quesadillas more than another fast casual brand. It is a franchise concept building its own lane and one that may be early in defining what the next great QSR category looks like.
