How Toasted Yolk Café Became a Go-To Restaurant for Millennials and Older Generations Alike

Toasted Yolk Café has emerged as a leader in the better-breakfast category by offering breakfast, brunch and lunch service, takeout options and an impressive cocktail menu.

Toasted Yolk Café, a better-breakfast, brunch and lunch brand with 16 units across Texas, saw impressive sales growth and continued franchise development in 2020 despite the challenges of the COVID-19 pandemic. This success can largely be attributed to the brand’s industry-leading consumer offering, which has cultivated a dedicated fan base over the years thanks to made-from-scratch breakfast, brunch and lunch menus.

“When Matt DeMott and I opened the first Toasted Yolk Café in 2010, our mission was to provide a unique dining experience through chef-inspired menus that featured fresh, mouth-watering takes on breakfast and lunch classics,” said co-founder Chris Milton. “Over the past decade, we’ve worked hard to perfect a simple, streamlined menu that resonates with all of our customers.”

Now, Toasted Yolk Café offers experienced restaurant professionals and savvy business entrepreneurs the opportunity to leverage this chef-driven menu and operate an in-demand, limited daypart concept with a proven record of success.

Toasted Yolk Café’s Made-from-Scratch Menu Stands Out With Diverse Selections, Quality Cocktails and Locally-Sourced Ingredients

The Toasted Yolk Café menu was created by restaurant industry veterans — and it shows. Milton and DeMott believed breakfast and lunch should never come from a box, which is why every aspect of the menu is made-from-scratch, including sauces, dressings and soups. In addition, franchisees source local ingredients at every opportunity to deliver the farm-to-table freshness that guests deserve.

The small yet diverse menu offers a little bit of Southern, Mexican, Californian and Americana cuisine, with everything from “power bowls” to classic pancakes, hash and omelets in addition to brunch cocktails, mimosas and specialty coffees. In each category, the brand’s innovative menu of American favorites are remixed and remastered for cultured, contemporary tastes.

Toasted Yolk Café also boasts a robust drinks menu, which satisfies customers’ cravings for fresh-squeezed juices, coffee confections or even something a little stronger. “Unlike other breakfast concepts, Toasted Yolk Café has a liquor license so that customers can purchase cocktails at brunch, making it a fan favorite,” said Milton. “Our motto is: it’s never too early to get Toasted.”

The brand’s laid-back environment and emphasis on quality food have proven to resonate with customers of all ages. “The traditional restaurant brand and familiar environment appeal to older customers who are more likely to keep regular breakfast or lunch plans, in addition to younger customers who tend to enjoy a weekend brunch with mimosas and other alcoholic offerings,” said Milton. “Our brand has a wide appeal and it has been a huge component to our continued success.”

Toasted Yolk Café’s Delivery-Friendly Lunch Menu Boosts Sales

While many breakfast and lunch concepts tend to neglect the “lunch” aspect of the business, Toasted Yolk Café doesn’t treat the later part of the day as an afterthought. The lunch and brunch menu, which includes classic sandwiches, starters, soups, salads and combos, allows franchisees to tap into both the late-day breakfast and lunch dayparts.

“We take pride in our lunch. Our strong lunch sales set us apart from other players within the category,” said Milton. “While other breakfast concepts see a large dip in sales after 11am, our numbers stay consistent until we close our doors at 3pm.”

Throughout the pandemic, off-premise revenue accounted for a large portion of the brand’s overall sales. Since lunch products are far more portable and delivery-friendly than most breakfast items, Toasted Yolk Café saw a surge in lunch sales that has continued to stay strong throughout 2021.

There are currently 16 Toasted Yolk Café locations in operation, five in construction and four in site selection. The brand plans to open another six restaurants this year, with specific target markets identified in Texas, Tennessee, Georgia, Alabama and Florida. Startup costs range from $788,000 to $1,155,500.
