"We definitely have Memphis on the radar screen as a top market we want to develop in," said Mark Cairns, director of franchise development for <a href="http://topperspizza.1851franchise.com/?utm_source=1851franchise.com&utm_medium=article&utm_campaign=memphis-business-journal-toppers-pizzas-impressive-expansion-plans-include-memphis-tennessee-locations-3814" target="_blank" rel="nofollow" target="_blank">Toppers Pizza</a>. Toppers currently has over 70 stores spanning over 12 states. The brand plans to reach 700 stores in the next decade, with 12 restaurants planned to open in 2016. The brand is focused on fresh ingredients, like Wisconsin cheese and speedy delivery times, with 15 to 20 percent of sales occurring after midnight. "We are kind of the vampires in the industry," Cairns said.
