Back in 1998, Eric Ersher made a realization about the restaurant industry—and that was the fact that really good, made-from-scratch soup was hard to come by. Looking to fill that unmet need, he opened the doors to his own restaurant in Southfield, Michigan: Zoup! Today, Zoup! has nearly 100 restaurants in more than 20 U.S. states and Ontario, with even more scheduled to open this year.
